ⓐ Gradually carve away the cake around the head to create a neck.

3 Carving the ice Take the cake trimmings and slice them horizontally to a depth of 2cm (¾in). Arrange the slices on the board to form a flat area for the walrus to sit on, Leave some areas of the edge clear.

4 Covering the ice Spread a thin layer of buttercream over the cake trimmings and cover with white sugarpaste. Trim away the excess paste then gently press into the sides of the ice block with a smoother or the flat edge of a ruler (see picture b). Add 1.25ml (¼ teaspoon) gum tragacanth to 50g (2oz) of the trimmings to make white modelling paste.
